Food directly from the earth heals our bodies.


There is something truly gratifying knowing the foods used to fuel my body and my children's bodies are not only whole, and "earthy" but delicious as well.



Based on my research and the goal to live a holistic approach to life and food, I am weening my family from meat products and becoming more plant-based. This was a no-brainer for my "woke", activist daughter, but my little guy who has the appetite of a 6' 8", 250lbs line-backer took more convincing.


So, today, I prepared a butter-milk and egg wash for my eggplant, seasoned with "southern staples" in the seasonings cabinet, with a rustic, harvest, garden salad. They devoured it!


My approach to food now is healing our bodies from the inside out.

Here's the menu and how these foods bless our bodies.


Menu: Fried eggplant and tomatillos with parmesan cheese Cooked in EVOO and seasoned before allowing to sit in buttermilk and egg batter for 30mins before cooking.




Rustic Harvest Salad: Tomato:

Major dietary source of the antioxidant lycopene, which has been linked to many health benefits, including reduced risk of heart disease and cancer.



Beets: 1. Help Keep Blood Pressure in Check 2. Can Improve Athletic Performance 3. May Help Fight Inflammation 4. May Improve Digestive Health 5. May Help Support Brain Health 6. May Have Some Anti-Cancer Properties 7. May Help You Lose Weight


Cumbers:

Eating cucumbers may lead to many potential health benefits, including weight loss, balanced hydration, digestive regularity and lower blood sugar levels.

Carrots: Carrots are a particularly good source of beta carotene, fiber, vitamin K1, potassium, and antioxidants. They also have a number of health benefits. They're a weight-loss-friendly food and have been linked to lower cholesterol levels and improved eye health.


Pecans:

Pecans are excellent sources of manganese and copper, two minerals that boost overall metabolic health, may contain anti-inflammatory properties, and potentially help reduce risk of heart disease. The added benefit: These nutrients have shown promise specifically in preventing in high blood pressure.


Cranberries:

Cranberries are considered to be a superfood due to their high nutrient and antioxidant content. In fact, research has linked the nutrients in cranberries to a lower risk of urinary tract infection (UTI), the prevention of certain types of cancer, improved immune function, and decreased blood pressure.


Avocados:

Avocados are a great source of vitamins C, E, K, and B-6, as well as riboflavin, niacin, folate, pantothenic acid, magnesium, and potassium. They also provide lutein, beta-carotene, and omega-3 fatty acids.


Lettuce:

It is a good source of fiber, iron, folate, and vitamin C.

All of the "benefit" descriptions are from the internet. Please do your own research. But these descriptions of foods were the primary reason I used them in concert with each other for a power-packed meal.
